Ingredients

  • 4 Burger Patties
  • 4 Hamburger Buns
  • Package of Pre-Cooked Bacon
  • 8 oz Fresh Mushrooms
  • 1 yellow onion sliced
  • 4 slices of Swiss cheese
  • 4 slices of cheddar cheese
  • Lettuce
  • Tomato sliced
  • BBQ Sauce
  • Mayo

Instructions

  • [mv_schema_meta name="Cook the Hamburger"] Place skillet on medium high heat. Season both sides of the burger with any burger seasoning. Cook for about 5 minutes, flip, and cook an additional 5 minutes or until desired doneness. Cooking time might be less for fresh hamburger as opposed to frozen.
  • [mv_schema_meta name="Caramelize Mushrooms & Onions"] Remove burgers from skillet and add mushrooms and onions. Cook until they are squishy and buttery looking. Add butter if you think you must.
  • [mv_schema_meta name="Cook the Bacon"] If using pre-cooked bacon slices, place on a microwave safe plate (paper plate) and microwave 10 to 20 seconds.
  • [mv_schema_meta name="Stack the Burgers"] Stack in some semblance of an order the bottom half of a bun, the burger, a slice of Swiss, a slice of Cheddar, bacon, the mushroom onions, lettuce, tomato, and use mayo and BBQ like its ketchup and mustard, and then top with the top bun.
  • [mv_schema_meta name="Optional Extra-ness"] If you want to be extra, you can prep the buns by buttering them and baking them before stacking the burgers. I'd bake them 3 to 5 minutes in an oven at 400°, or a toaster oven on toast.

Where did I get this recipe?

From a small diner in Cheyenne, Wyoming.

I was stationed in Wyoming back in the early millennium where I met my ex husband, and we used to go to this small diner in downtown Cheyenne for lunch. Our favorite meal from them was the Cheyenne Burger. The best way to describe it is a Cowboy Burger for people unaware of what or where Cheyenne or Wyoming is.

Since then, we’ve both separated and moved away, so I try to replicate the Cheyenne Burger. It seems the diner is no longer there.

Ingredients

The thing that made this burger special other than date lunch with my ex was the toppings. The burger and bun itself was pretty average.

I believe the original burger had Onion Rings on it. As well.

As a mom of 3, I try to make dinner as painless as possible, so I like to get the pre-cooked bacon that I can microwave for 10 seconds. All stacked on each other. IF I were to use regular bacon, I tend to pan fry bacon but that does take a minute. If you want to make bacon faster, you can spread it out on a cookie sheet and bake it.

The BBQ Sauce – I do not recall any special amazing bbq sauce being used on this. So in essence, you could use any. We generally use G. Hughes Smokehouse Sugar Free BBQ sauce, Hickory flavored, but I do like Sweet Baby Ray’s, and the Jim Beam Maple Bourbon. The Open Pit Brown Sugar and Bourbon is good too. I want to try Yuengling BBQ Sauce.

Total Grocery Spend – $31.13

At my Walmart, the cost of all the ingredients to make 6 burgers is $31.13.

Process

Cook the burgers any which way you want. I usually use my electric skillet.

  1. Heat it to about 350
  2. salt some patties (fresh or frozen depending on sales and pricing)
  3. Place patties on hot skillet
  4. Season the top side of hamburger
  5. When they no longer stick and are a lil seared, flip them
  6. Cook until desired doneness
  7. Remove burgers
  8. Add onions and mushrooms and “sauté.”
  9. Add butter to that if you need to
  10. Also microwave bacon.
  11. Turn off skillet
  12. Grab a plate and start stacking
  13. Start with Bottom Bun
  14. Butter it
  15. Add hamburger
  16. Add a slice of cheddar
  17. Add a slice of swiss
  18. Add bacon
  19. Add a spoonful of mushrooms and onions
  20. Add onion rings if you drove thru Hardees
  21. Take Top Buns and butter them.
  22. Then put in a toaster oven or oven and bake at 400 for about 5 minutes until toasted
  23. Add Lettuce
  24. Add a slice of tomato
  25. Add Mayo
  26. Add BBQ sauce
  27. Add top bun
  28. Done

Note that you can make the bacon in the skillet between the burgers and the onions/mushrooms instead of microwave, or bake them as mentioned above.

I don’t always bake or toast the burgers or buns. It’s still good if you don’t.

Keto Considerations

This isn’t exactly the healthiest burger option out there, but for the most part, you are dealing with meat, cheese, veggies and condiments, so if you wanted to reduce carbs, you could

A. Use Keto Bread as a hamburger bun

B. Use a Keto Low Carb Tortilla Wrap to wrap the burger in

C. Use Lettuce to make a wrap

For diabetic diets, you might consider using a bun that is high in fiber.

What to Serve with Cowboy Burgers?

When I ordered this at a diner, we either got French Fries or Onion Rings to go with it because ‘Murica. But as a mom, I try to be a little more conscientious of the health aspect so here are some other ideas…

Chili would go well with this.
