Cheese Lover's Adult Grilled Cheese Sandwich Recipe
Ultimate adult or gourmet grilled cheese sandwich with cheddar, swiss, tomatoes and spicy honey mustard on Pumpernickel bread. A classy classic for people who LOVE cheese.
Ingredients
- 2 slices Pumpernickel Bread
- 4 slices of Swiss Cheese
- 4 Slices of Cheddar Cheese
- 2 Slices of Tomato
- 1 TBSP of Spicy Honey Mustard
- 1 TBSP Butter
Instructions
- Butter one side of the bread for each slice.
- Place one slice down on a skillet set to medium heat.
- Add 2 slices of Swiss. 2 Slices of Cheddar. 2 Tomato Slices. TBSP of Mustard. 2 Slices of Cheddar. 2 Slices of Swiss. And the second bread slice butter side up.
- Cook for about 2 - 4 minutes until the bottom half of the cheese is melted a bit.
- Flip sandwich carefully.
- Cook another 2 - 4 minutes until the bottom half of the cheese is melted a bit.

Where did I get this Recipe?
We used to have a restaurant in town called 3rd Street Deli. Slightly uppity. One of my favorite lunch places. I always ordered the Cheese Lover’s Grilled Cheese with a Tomato Basil Pasta Salad and an Almond Torte. So this is a copycat of their sandwich.
One time I went into 3rd Street Deli to get my favorite lunch from back when I worked downtown and had a job job that I was craving while my children were considerably young. I hadn’t slept in a minute, and last second I decided to get a to-go order. BUT I was sporting a pair of fuzzy pajama pants featuring the cookie monster’s face across the buttocks. And the look was complete with messy bun and flip flops. I was brave and went in anyway because sandwich.
I walked in. Everyone was in suits and ties. Everyone looked at me. Judging me. Silently mocking my life choices. While I waited the 5 minutes, I saw a guy I recognize. Dan. Everyone in town loves Dan. He chose to be an attorney, but he specializes only in buying and selling property. And he smiled big the moment he saw me and gave me a big hug and everyone stopped staring so rudely after that.
Cheese Lover’s Grilled Cheese Ingredients

You only need the following ingredients:
- Pumpernickel Bread
- Cheddar Cheese Slices
- Swiss Cheese Slices
- Tomato Slices
- Honey Dijon Mustard

For $9.96, you can make 3 sandwiches; however, you can make 6 if you used one slice of each cheese in a sandwich instead of 2.
Cheese Lover’s Grilled Cheese Process
It’s a pretty standard process for making a grilled cheese.
While not mentioned as an ingredient, you can butter the slices, or drizzle some olive oil over them, or if non-stick skillet, put the bread down bare.
I usually put her down bare. But in the recipe card, I suggested butter because that will probably spiff up the sandwich a bit and works better on skillets that aren’t as non-stick as they claim to be.
Then you stack the suckers on the frying pan. So set that pan on medium heat, lay out the bread, stack with one slice of each cheese, add tomatoes, add mustard, add another slice of each cheese and add the top bread.

When it comes time to flip (a couple minutes), you want to do this carefully as the sandwich can fall apart easily.
Quick Tip: When making a grilled cheese, I often, in lieu of a lid, hold the spatula over the sandwich like a lid to help trap in some heat to cook the sandwich more thorough.
Keto Diet Considerations – Get it down to 4g Net Carbs
So this baby has a lot of carbs. With the ingredients I listed in my Walmart shopping list, each adult grilled cheese sandwich has 28 net carbs.
But the bulk of those carbs are from the bread.
With 2 slices of tomatoes being listed with 2 grams of carbs (could be less), you can order this Keto Pumpernickel Bread sporting 1 gram of net carbs in each slice.
Diabetic Considerations
While a diabetic version of this recipe could easily use the Keto Bread listed above, Every Day Health said that the best bread is high in fiber (at least 3 grams per slice) as fiber improves glycemic index. Additionally, a good bread for diabetes (if using 2 slices) has less than 15 grams of net carbs per slice and less than 100 calories per slice. The third thing is to aim for WHOLE grains instead of not-whole-grains. In the ingredients, it will say WHOLE, or you can look for the Whole Grain stamp.
When it comes to this recipe, the Pepperidge Farm Bread suggested from Walmart has 13 net carbs and 80 calories per slice. I would not make this a guilt free meal, but one you can easily fit into your diet. Switching to the Keto Bread mentioned above, however, is a little more guilt free but keep in mind none of them are made from whole grains.
Make it a Delicious Lunch
Or you can make it a delicious dinner if you wanted but served with a good pasta salad, or any salad, turns the sandwich into a small meal.
My favorite is Caprese anything. Like take tomatoes, basil and fresh mozzarella, cubed, and stir in with some olive oil. If you add pasta to that to make a pasta salad, I suggest boiling the pasta in cheap red wine (like Reunite Lambrusco), some balsamic vinegar, and adding garlic and crushed red pepper to it.
